To meet the demands of this high-volume kitchen, the team of 12 chefs relies on a Convotherm maxx pro 20.10 and two stacked 6.10 models. These ovens support the main dining room serving up to 130 guests, two private dining rooms, and the Chef’s Table.
Southeast Asian cuisine often uses secondary cuts of meat, which require long cooking times. The advanced steam function provides precise, consistent steam control, eliminating common issues found with traditional steamers, such as temperature fluctuations and dry runs.
To maintain speed and flexibility, the stacked 6.10 combi ovens enable simultaneous cooking at different temperatures and settings. With every square inch of kitchen space at a premium, this versatility means Chin Chin can consolidate equipment—handling steaming, roasting, and slow cooking all in one system.
The Disappearing Door has also been a standout feature, ensuring unimpeded workflow and safe, easy access when loading and unloading trays.
