Eglfing / Herborn, Germany - For more than 20 years, the Welbilt brand Convotherm has been a sponsor of the international cooking competition Bocuse d'Or. And Convotherm will once again be part of the team at the worldwide final on 22 and 23 January at the SIRHA in Lyon. With the Convotherm maxx pro, the premium class combi oven, the maxx pro will support the professional chefs and help one of the 24 international teams, which have previously successfully fought their way through the local, regional and national rounds, to victory and to winning the "Bocuse d’Or".

Culinary event in a class of its own with Convotherm  

The culinary competition,  initiated by three-star chef Paul Bocuse, has been taking place at the international gastronomy fair SIRHA every two years since 1987. Today, more than ever, the Bocuse d'Or is an incubator for talent, focusing on commitment, passion, technology and creativity for the culinary excellence of tomorrow. Convotherm has supported the exceptional competition as a main sponsor for more than two decades, most recently at the European final in Budapest in March 2022, where the selected menus were prepared using the industry-leading technology of the Convotherm maxx pro.

The cooking competition will open on 22 January with the theme "Feed the Kids", highlighting the importance of nutrition for children's health. A menu based on marrow, a versatile ingredient and thus part of the Bocuse d'Or DNA, is to be created. For a balanced main course, one egg per portion is to be included in the recipe.

This year, the culinary focus of the so-called Bocuse d'Or plates will be on monkfish. Monkfish is considered a fish that is known for its unattractive appearance, but also for the finesse and quality of its meat. Each chef is given two monkfish and six scallops to prepare a hot dish for 15 people in five and a half hours. The fish are presented on two separate platters and must be accompanied by two side dishes consisting exclusively of vegetable products.
