Everyone’s talking about smoked food right now, and the Convotherm 4 easyTouch® table-top units come with an optional ConvoSmoke function to give dishes that special smoky aroma. The appliances are very easy to use: all you need to do is put a small metal box with smoking bisquettes onto the heating elements inside the Convotherm 4 to create smoke in the combi oven, and its unique Advanced Closed System+ ensures that no smoke escapes from the chamber, meaning that food can be smoked at any time without impairing other food preparation processes. The ConvoSmoke also offers high reliability, as the way it integrates into the appliance means that no external interfaces or connections are required. Control and operation is easy thanks to the icon-based easyTouch® full touchscreen, and the appliance also has multi-stage cooking profiles that can be programmed so that you do not have to be present during cooking. Another big plus is that the smoke remains in the cooking chamber, which increases the smoke concentration and creates a more intense flavor. Specially designed accessories, such as the baking and frying basket, are available for the Convotherm 4 to create the perfect smoking results, while the optional oven rack leaves a cross pattern on steaks, fish and antipasti to make the food you produce look even more appetizing. A further feature that makes life easier for professional chefs is the easy cleaning function thanks to the non-stick coating on the surface of the baking and frying basket and the oven rack. Convotherm’s fully automatic cleaning system is certified for unsupervised cleaning, which means you can go and enjoy your night without having to wait for cleaning to finish. Alternatively, you can continue working as soon as cleaning is finished – with no follow-up inspection required. The system also enhances safety, as there is no need for contact with the cleaning fluid when starting the cleaning process.

Recommended recipe from Convotherm for mouthwatering mango and tofu skewers:

Mango and tofu skewers
Ingredients (serves 4):

800 g tofu
2 large mangos

For the marinade:
100 ml olive oil
100 g tomato purée
100 ml white balsamic vinegar
100 ml soy sauce
½ a chili pepper
2 level tablespoons salt
1 level teaspoon black pepper
½ teaspoon curry powder
2 tablespoons liquid honey

Preparation:
Cut the tofu into cubes of approx. 3 cm, then marinade and steep for 3-4 hours. Now put the tofu into a baking/frying basket for smoking.

Smoking in the Convotherm 4 easyTouch®:
1. Fill the smoking box with three wooden bisquettes and then put it onto the heating elements.
2. Put the baking/frying basket containing the tofu into the Convotherm.
3. Set the multi-stage profile to smoke for 2 hours.
Hot air: 30 °C, 5 minutes, fan speed level 2, Crisp&Tasty level 2.

Peel the mango and cut the flesh into cubes.
Put the tofu and mango alternately on the wooden skewers.
Put the skewers on the hot oven rack with the cross pattern and grill.

Grill in the Convotherm 4 easyTouch® using the hot air: 235 °C, 6 minutes profile
Recommended garnish: tofu zucchini rolls, chickpea ragout and salad.
