The Convotherm 4 BAKE makes it possible as it brings traditional baking expertise – without an additional proofing cabinet – together with the proven, modern and functional diversity of the combi oven. The BAKE series stands out by offering the preparation of fresh baked goods as well as of products for the hot-food counter in top, reproducible quality. What is new and unique in the Convotherm 4 BAKE is that the appliance is equipped with special suction panels suited for the requirements of baking. What’s more, the multistage “BakePro” baking feature ensures excellent volume and a perfect sheen with small baked goods. Thanks to the newly developed Rise&Ready proofing profiles, it is now possible to ferment even formed dough pieces. The icon-based easyTouch® full touchscreen provides digital simplification and enables intuitive operation, which helps even unskilled personnel master the use of its functions. An integrated baking cookbook and associated accessories in the euronorm size round out the innovative Convotherm 4 BAKE.
The Convotherm 4 BAKE is available as an electric injection unit in two sizes: Model 6.10 and model 10.10 with optional disappearing door.

Natural Smart Climate™ in the Convotherm 4 BAKE guarantees optimal conditions in the cooking chamber. It has the effect of allowing every type of food to absorb just the right amount of moisture all on its own and naturally. This is possible through the unique ACS+ closed cooking system. One of the biggest advantages when cooking with combi-steam in the Convotherm 4 BAKE with Natural Smart Climate™: The product’s own moisture, flavors and vitamins are retained in pristine condition.
Whether pre-proofed, frozen or parbaked – with the traditional “BakePro” baking function, the results are a uniform success even with a full load: the “BakePro” feature enables ideal rising of small and wheat baked goods and gives them an appetizing sheen. Since the preparation of wheat and wholegrain baked goods differs fundamentally, the Convotherm 4 BAKE also has product-specific baking modes that make success a sure thing.

Optimized processes with consistent, top baking results
The Convotherm 4 BAKE is equipped with the full touchscreen easyTouch® feature. The icon-based menu makes control simple and intuitive. With Press&Go, automatic baking is a success and delivers uniform, reproducible baking results in professional quality. There are preprogrammed cooking profiles in the memory for various product categories, such as baking, snacks and for your hot-food counter. In the Press&Go mode, the user can maintain a good overview with the “TrayView.” With rolling mixed loads, the display shows precisely how long the individual shelves need to remain in the cooking chamber. That means that the progress can be tracked with accuracy down to the second. Every time the appliance door is opened, “TrayView” recalculates the baking time for each shelf separately. Your own custom cooking profiles can be saved easily as favorites including photos. Custom culinary ideas are then always merely a finger tap away. A further new feature is the additional bakingtime feature. With it, the baking time can be extended by an additional three minutes at the tap of a finger if needed.

Further highlights in the Convotherm 4 BAKE series
The integrated baking book simplifies your work with preprogrammed baking and cooking recipes. For fresh yeast dough, there are also specially designed Rise&Ready proofing profiles. They facilitate the development of optimal aroma and volume in the food in three levels. The built-in, variable speed fan has five control levels and in “BakePro” is switched off temporarily completely, which is important for obtaining perfect volume and sheen in sensitive baked products. What about saving space and providing more safety? The optional disappearing door covers both needs. The door is guided into the side of the appliance via a rail when it is opened. This keeps traffic paths free and minimizes contact with the hot pane.

Accessories for the Convotherm 4 BAKE
For businesses that want to offer their customers professionally prepared products despite having little space, the Convotherm 4 BAKE series offers a new stacking kit solution. In two combi ovens stacked one on top of the other, you can prepare large amounts of food very flexibly. Accessories such as cleaners and the water treatment cartridge disappear together in a rolling pull-out drawer under the combi ovens. This not only saves space, it also simplifies cleaning under the appliances because the drawer can be rolled out completely. There is also a selection of stands, condensation hoods and mobile shelf racks available to choose from. Baking trays with a non-stick coating as well as racks are available for the Convotherm 4 BAKE in the euronorm size.
