The Delfield blast chillers have zero environmental impact with Welbilt’s CO2 refrigerant option and deliver the quickest chill time in the industry due to the proprietary high-speed electronic expansion valve, digital fan mechanism, and robust insulation. Further, these blast chillers can chill foods from any temperature, another feature operators tell us is important when choosing a blast chiller.

After cooking, smart chefs increase their combi-oven’s capacity by pairing it with a holding cabinet. The Merco roll-in hot holding cabinet is designed with a Top Mount Heat System to minimize temperature variations and a low temperature alarm to ensure food safety standards are met. The cabinets are available in stationary and mobile versions.

These companion units will accompany the Convotherm roll-in combi oven, featuring the proprietary Advanced Closed System + which delivers consistent results on every tray - top to bottom - and ConvoClean +, the hands free, fully automated cleaning system that is a great time saver for operators. In addition, the unique Integrated Heat Bridge folds automatically when the door closes resulting in no heat loss and a safer working environment.
