It’s a genuine all-round star in the kitchen: with its unique Advanced Closed System+ (ACS+), the flexible ConvoClean+ cleaning system and the space-saving disappearing door, the Convotherm 4 easyTouch® offers real benefits for chefs’ everyday routines. The Schlenkerla Brewery in Bamberg, Germany is the perfect example of how the Convotherm 4 can provide a kitchen solution suitable for a variety of different establishments.   Within the Brewery, there are three stacking kits (6.10 / 10.10) for six Convotherm 4 easyTouch appliances which have been in operation around-the-clock there since 2016. About 1,000 different dishes are served daily – from dumplings to specialties like roulades and even maibock beer. Previously, all of the meals were cooked over an open gas flame in the brewery’s cramped kitchen. With the purchase of the Convotherm 4 combi ovens, the workflow has significantly improved. Matthias Trum, owner of the Schlenkerla Brewery comments:  “The combi oven is a tremendous asset to our business. The reliability, ease of operation, robustness and, especially, the unique disappearing door are all very important features.
 
The disappearing door keeps workspace clear
The Convotherm 4’s signature disappearing door is an especially important advantage for operations where people are working in close quarters. When the door is opened, it runs back on a track along the side of the oven. This avoids having the open combi oven door blocking the main kitchen aisles. The risk of injury due to contact with the hot inner surface and pane of the door is reduced considerably as it faces the side of the appliance rather than outwards and towards staff. For head chef Wolfgang Theil at the Schlenkerla Brewery, the disappearing door was one of the deciding factors when  considering to purchase a Convotherm 4 easyTouch:  “It was actually one of the main reasons for the decision, because we work in very close quarters here and would otherwise not have been able to get past the appliances when a door was open. After all, we open and close the oven doors by the minute, because we also use the appliances for keeping food warm.”
 
Flexible cleaning with ConvoClean+
The ConvoClean+ cleaning system is also one of the Convotherm 4 easyTouch highlights for Wolfgang Theil: thanks to the fully automatic process offering a choice between three different programs – eco, express and regular mode. Depending on how much cleaning is required, there is also a choice between four cleaning levels which provides a suitable setting for every need. Overnight cleaning is also an option – after completion of the program, the steam disinfection and drying functions ensure perfect hygiene for use the following day. Additionally, the Convotherm 4 easyTouch is also designed to operate efficiently in terms of energy and water conservation. In an establishment like this brewery, where the appliances sometimes run around the clock, this helps to reduce operating costs.
 
Cooking results in focus
In the brewery, dumplings are cooked, sauces are made and roulades are roasted in the Convotherm 4 easyTouch. The easyTouch offers ideal cooking functions for preparing dishes away from peak times, so that meals are cooked to perfect consistency: braised pork leg and shoulder are easily pre-cooked in large quantities, and the “Crisp&Tasty” feature is then used on demand to finish roasting to create that desired crisp finished effect. A further highlight is the smoker feature, which the kitchen team at the brewery uses to add a fine finishing touch to foods, ensuring a delicate flavor experience. One feature which is especially useful when using the smoking feature is the Advanced Closed System+ (ACS+). This prevents any smoke from escaping the oven during the smoking process. Matthias Trum, owner of the Schlenkerla Brewery adds: “Another advantage is that the appliances radiate almost no heat on the outside. Previously, the conditions were barely tolerable for the staff, especially in summer, but these days, the kitchen is sometimes the coolest place in the building!”
 
An eatery with a long tradition
The Schlenkerla Brewery in Bamberg, Germany is considered the secret hub of Bamberg and can be found in one of the most beautiful half-timbered houses in the old town. The business is managed by the sixth generation of the same family and is one of the few breweries that still operates its own malthouse. Locals and guests can not only enjoy freshly-tapped smoked beer from heavy oak barrels, but also regional and seasonal foods with fresh products – of course with the brewery’s own beer as a refining ingredient – all in a merry atmosphere at bare wooden tables. Moreover, different types of beer are offered depending on the season, such as a special lent beer or a bubbly, light summer beer.
