Happy Thanksgiving!
Here our recipe for you brined turkey.

Brined Turkey Profile:
10 liter water, 1 kg sugar, 1 kg salt, 25g cinnamon, 25g pimento, 25g cloves, 25g nutmeg, 25g black pepper

cook a stock out of the ingredients, after cooldown, put in the turkey and let it rest over night

on the following day, cook in the Convotherm as follows:

step 1: 145°C (320°F) combi steam, core temperature 82°C (179°F), fan speed 3
step 2: 180°C (356°F), convection, 10 minutes, C&T 5, fan speed 5
